What do Cheeses and Alligators have in Common?

In The Summer of a Thousand Cheeses we noted that as children we thought yellow-orange is the natural color of cheese; that is the way it is invariably depicted in cartoons. In fact cheeses made from cow milk do have a faint yellowish tinge, but their color is much closer to white than to orange. Alligators have a similar problem. In cartoons they are invariably green, while real alligators are dark gray or black. Perhaps the same artist who long ago created an iconic image of an artificially colored cheese also depicted an alligator with a heavy coating of green algae, creating misconceptions with amazing staying power.
